张虹教授,博士生导师

     张虹,女,19628月出生于北京,博士,教授,博士生导师。1985年毕业于杭州商学院(现浙江工商大学),于2004年获浙江大学化学博士学位。曾作为访问学者赴美国农业部南方研究中心从事研究工作。199512月起任职于浙江工商大学食品与生物工程学院。 

目前承担仪器分析、食品营养学等课程的本科生、研究生的教学任务。从事食品质量与安全、功能性食品及水产品开发的研究,先后主持承担了科技部国际合作项目“基于壳仁分离技术的亚麻籽生物活性成分联合研究及设备开发”

浙江省重大招标项目“出口优势水产品(头足类)精深加工关键技术研究及系列产品研制”, 浙江省自然基金项目“鮟鱇鱼糖氨聚糖提取及其结构和活性的质谱研究”,浙江省农业科技成果转化项目“养殖大黄鱼、美国红鱼深加工技术中试示范”, 浙江省科技厅项目“食品中多种氟喹诺酮类药物残留分析方法研究”、“海洋生物肽研究及功能型评价”、“罐装食品中双酚类环氧衍生物的分析方法及其迁移规律的研究”等项目。作为第一完成人获得中国商业联合会商业技术进步二等奖一次,获授权国家发明专利1项;作为主要完成人获得获得中国商业联合会商业技术进步一等2次,二等奖2次,浙江省科技进步二等奖2次,获授权国家发明专利4项。在国内外学术期刊上发表论文60余篇,其中40余篇被SCI/EI/ISTP收录。现任中国罐头工业协会专家委员会委员,浙江省保健品协会专家委员会委员,浙江省食品协会理事。

研究方向:

(i) 食品质量与安全,利用液质联用、气质联用及免疫分析等手段分析及控制食品中的有毒有害成分。如:食品中各种抗生素类、食品添加剂、多环芳烃类等的残留物质及代谢物质分析;双酚A等环氧衍生物在罐头食品涂料、内容物中含量及迁移规律的研究;辐照食品的分析及安全评价等;

(ii) 功能因子评价:分离纯化、鉴定及活性评价不同食物来源及药用植物(冬虫夏草、藏红花等)中抗癌、调血压、调血脂、促生长、降血糖等生物活性成分;

(iii) 功能食品开发:利用低值水产品、农产品及加工副产物开发新型功能食品及药物,如富含功能性多糖及肽的发酵制品、糖氨聚糖(软骨素、皮肤素)相关产品等。
