研究方向:
1. 公众营养,膳食结构与人体健康的关系,重点关注代谢综合征的发病和预防。
2. 功能食品研发及功效评价,主要面向通过现代食品加工方式将药食同源原料用于功能性食品研发,以及面向不同人群的消化特性和健康需求研发针对性的功能性食品。
3. 加工引起的食物蛋白质氧化机制,以及蛋白质氧化产物对机体健康的影响。
主持浙江省自然科学基金2项,参与国家级自然科学基金5项,参与省级自然科学基金2项,主持或参与企业合作研发项目多项。发表SCI论文30余篇,发表专利2项。参与编写高校教材《食品营养学实验与技术》,该教材入选中国轻工业“十三五”规划教材,以及“十三五”江苏省高等学校重点教材。
