Yue Zhang,博士,助理教授,任职于University of Nebraska-Lincoln, United States(美国内布拉斯加大学林肯分校),长期从事食品功能改性、蛋白为主的包埋技术如纳米颗粒、乳液、可食用膜等研究工作。目前已发表论文41篇,论文他引大于860次,i-index: 31,出版专著2余部,
报告摘要:
There is a pressing need for delivery systems to encapsulate and release bioactive compounds such as vitamins, antimicrobial agents, anticancer drugs, etc. Among encapsulation materials, protein-based nanocarriers have received enormous attention because they are natural, biodegradable, abundant with excellent physical properties. Casein and zein are the two most commonly used protein materials. However, there are still many challenges or concerns related to their allergenicity, instability at low pH, and low redispersibility, etc. So, in this presentation, attempts to overcome these problems associated with the utilization of protein-based materials will be discussed.
