李腾:浙江海宁人,1989年7月生,副研究员、硕士生导师,2020年于美国田纳西大学获得食品科学博士学位。2020年12月入职浙江工商大学食品微结构实验室。目前主持国家自然科学青年基金和浙江省自然科学基金各1项,参与国家自然科学基金面上项目1项。近年来在《Biomacromolecules》、《Food Hydrocolloids》、《Journal of Agricultural and Food Chemistry》等SCI期刊发表论文20余篇。目前担任《International Journal of Biological Macromolecules》、《Food Chemistry》等多个SCI期刊审稿人。
主要研究方向如下:
1. 食品级防冰材料的理性构建、作用机制及在提升冷冻食品品质中的应用
2. 生物材料的可控自组装和功能特性研究
3. 小分子营养元素的稳态化和靶向递送
食品微结构实验室共有本、硕、博学生共20多人,科研氛围浓厚,同学关系融洽。实验室定期举办home趴、聚餐等团建活动。每届带1-2名本科同学参加生科、希望杯等学科竞赛。作为第一指导教师指导学生获得生科竞赛国家三等奖两项,挑战杯省金奖一项。2021年来作为副导师指导硕士毕业3人,共发表SCI论文8篇,3人均获二等及以上奖学金。
