The Food Oral Processing Lab at Zhejiang Gongshang University is the first established lab of its kind in China and tops around the world. The lab has a total working capacity of 180 m2 with 5 million of research funding. Within the lab, there are more than a dozen of master and doctoral graduate students, and five overseas postdocs working in areas including food physics, sensory evaluation and food physical chemistry. The lab is equipped with state-of-the-art shear and extensional rheometers, textural analyzer and surface tension devices, along with nanoparticle cracking analyzer and particle size analyzer, fully capable of examining the physical and textural properties of food samples. The oral physiological measuring devices including the IOPI, pressure distribution analyzer, tactile measurement and infrared thermal imager are also highlights of the lab as a food oral processing lab. Taken into account of the various applications of sensory evaluations required for a number of different research projects, a separate sensory evaluation lab was set for undisturbed and objective sensory evaluations.
