石玉刚副教授,硕士生导师

  石玉刚,男,19806月生,博士,副教授,硕士生导师。20093月获江南大学博士学位,并任职于浙江工商大学食品与生物工程学院食工系,2011-2012年台湾中正大学博士后。2014-2015年获国家留学基金委资助多伦多大学(University of Toronto)访学

  教学上,主要承担本科及研究生核心课程《化工原理》、《食品工厂设计与环境保护》、《现代食品高新技术》等课程的教学任务,并承担浙江省教育科学规划(高校)研究课题项目,发表相关教改论文5篇,指导学生参加各类国家、省级大学生科技创新与创业项目及大赛,并多次获得全国生命科学大赛二等奖、中国互联网大学生创新创业大赛浙江省“银奖”、全国“铜奖”、全国(浙江省)大学生化工大赛二等奖、“彩虹杯”大学生职业生涯规划大赛一等奖等

  科研上,主持国家自然科学基金、浙江省自然科学基金、浙江省科技厅项目及浙江省教育厅项目等,目前正参与及主持科研项目包括,浙江省公益技术研究项目 (GJ19C200001, LTGN24C200004),国家自然科学基金面上项目(42377342,31772100),浙江省引智项目 (Z20170407),一流学科建设国际合作研究项目(2017SICR109),工业生物技术教育部重点实验室课题项目等。并承担“基于酚酸类活性物的多功能产品开发(保健食品)”、“防腐剂对酱菜类产品品质的影响研究”、“特色猪肉制品品质提升关键技术”、“宠物食品开发”等横向企业课题并为企业提供技术指导。在相关领域国内外学术期刊上发表论文50余篇,其中SCIEI收录40多篇;授权专利10余项,参与《Food Science and Technology, 2nd Edition英文书籍编著并是Journal agriculture and Food ChemistryACS Applied Materials & InterfacesFood Hydrocolloids、Food Chemistry、Food Microbiology等国际期刊审稿人,《食品科学》期刊2022年度优秀审稿专家。曾获浙江工商大学青年优秀科研成果奖三等奖,获“西湖学者”拔尖人才培育计划、拔尖人才计划项目资助。

 

 

       研究方向:

       1多效食品助剂(天然抑菌剂、防腐剂、稳定剂在食品工业领域中的应用;

       2新型食品非热杀菌技术(尤其光动力灭活技术);

       3食品活性物的抗菌与营养健康功能及机制;

       4可食性智能纳米材料设计与应用
